Great Applesauce/Wheat Germ Muffins

My friend, Sally made these muffins for us and we just HAD to have the recipe! Katie is now eating them every morning for breakfast and snacks. I've got a second "dbl" batch in the oven right now! Ok, so here they are on the left, done! I'm dropping some off for my friend Susan and her hubby before the leave for their camping trip to the Kenai Penninsula this morning.

Sally's Applesauce Wheat Germ Muffins (easily doubled)
12 muffins - oven 400°F
Butter inside and top of a regular size (1/3C.) muffin pan.

In large bowl combine:
1 1/2 C. unbleached flour
1 C. toasted wheat germ
2 tsp. baking powder
1/2 tsp. baking soda
3/4 tsp. salt
1 tsp. cinnamon
1/4 tsp. freshly grated nutmeg
3/4 C. walnut (or pecan) pieces
2/3 C. dried cranberries (not craisins, too sweet - bulk from Fred Meyers)
2/3 C. Ghiradelli DBL (60% cocoa) chocolate chips

In a medium bowl combine:
1 large egg beaten
1/2 C. loosely packed light brown sugar
1/3 C. Vegetable oil (canola)
1 C. applesauce (no sugar added)
1/2 C skim milk

Mix wet ingredients with the dry ingredients until just evenly moistened. Spoon batter into muffin cups. Sprinkle topping (4 tsp. sugar, 1/4 tsp. cinnamon) on top of each muffin.
Bake 17 minutes or until done. Let sit in pan a few minutes before removing. Serve warm, not hot. *Great served with a plate of fresh fruit!

We've been addicted to edamame (soy beans) that Sam's sells. There are eight bowls in a box and they are microwaveable. They each come with a little packet of sea salt for seasoning. I am not a big vegetable eater, but these things are GOOD!

And they're good for you too!
